Pane Giallo - Polenta Bread

‘Pane Giallo’ in Italian means Yellow Bread. This Mediterranean special, uses a very colorful mix of Polenta and Red bell pepper to make a golden colored bread that is bursting with flavour. Drizzle some extra virgin olive and served hot along with soup would make you smile and satisfied.

It is v simple and strightforward. I saw this Bread on the net and referred to couple of them to get this one.

Ingredients
  • 1 1/2 cups Polenta

  • 1 tsp salt
  • 3 cups bread flour
  • 2 1/4 tsp of rapid rise dried yeast
  • 2 medium sized (or 1 large) Red bell pepper
  • 1 tsp sugar

Method

1. Roast the bell pepper till dark. Let it cool and peel the skin and cut into chunks. Set aside.

Mix polenta, flour,salt,sugar and yeast together till blended.

2.Add the bell peppers and mix well. Add 1 1/4 cups warm water and 1 tbsp Olive oil and make it into a soft dough.

3.Place in an oiled bowl and cover with plastic warm. Leave it a warm place till doubled in bulk ( about 30-60min depending on the weather of your place )

4.Punch down the dough, knead lightly and then place it a greased loaf pan and cover again with a plastic wrap and leave till risen. Preheat Oven 425F

5.Bake for 20-30min until golden and the underneath of the bread sound hollow when tapped. Cool for few minutes

cut it into slices and then serve with some soup.
