Aloo Mutter - (Potatoes and Peas Curry)
Aloo ( Potatoes ) Mutter (Peas in Hindi ) is an North Indian speciality. The variation for this dish is too many to count but each ending up vying for your attention. The Potatoes and Peas cooked along with the spices, takes one to ‘gas’tronomical heaven!(;-))
I find that there is a big misnomer about spices in Indian Cooking. I hear people using it to denote the ‘hotness’ of the dish. One can reduce the chilli/avoid it altogether if not suitable but at the same time enjoy the tingling sensation of the aromatic spices in the dish. Next time dont think twice to try out an Indian delicacy seeing the no. of spices. Jus skip out chillies and reduce the level of other spices a tad bit ( till you find out your comfort level) and you are good to go.
Method
1.In a non stick, heat some oil (ghee/butter) and add the onions. Saute them for a 1 min, add ginger garlic paste , chillies (if using) and saute some more till the onions get transluscent.
2.Add all the spices along with salt and bay leaf and saute them for 2-3min.
3.Add the Potatoes and cook for another 2-3 min.
4.Add the tomatoes, stir for another 1 min and add a cup of water and close the lid and cook for 4-5 min.
5. Add the peas and cook some till all the water has been absorbed and potatoes are tender.
6.Garnish with cilantro and serve with Indian Breads or with rice.

I chose the Zodiac Sign : Pisces which corresponded to vegetable Peas. I am a true blue piscean and from what I know, I believe that Pisceans have at least one characteristic from each of the other Zodiac signs. So its always easy for us to move with people since we have at least one similarity with the other person. I dunno how true this is but I know that I personally feel that way.
