		<description><![CDATA[The fever bug certainly seems to have made it's nest in our house. Last week, it was Agastya, and now it is Rengoni. The poor girl has been at home for the last couple of days. With quite a few exciting things happening in the class, she is obviously disappointed to have to miss all that action. But, at least, she is much better than yesterday, touch wood. Dinesh is no better, and has been sneezing quite a lot too.<br /><br />On the kitchen front, I have been making dishes which are quite easy on the tummy. One such dish, which got the thumbs up from even the invalids, is the following <span style="font-weight: bold; font-style: italic;">three rice and vegetables bake.</span><br /><br /><div style="text-align: center;"><img src="http://i217.photobucket.com/albums/cc99/sunita11/a1-41.jpg" /><br /></div><br />To be honest, this was made with the odd bits and bobs of vegetables that were lying around. With not much shopping done over the weekend, this dish was a last minute resort. The remains from a pack of mixed rice and lots of vegetables , and finished off with some cheese, made this  a very wholesome dish. It was neither a khichdi nor a risotto (no oil or butter was added, no sweating of onions and frying the rice)...somewhat similar to the two, but even easier, and did not compromise on the taste front. It needs a little bit of time, but it's worth it.<br /><br /><span style="font-weight: bold; font-style: italic;">What's needed-</span><br /><br />2C <span style="font-weight: bold; font-style: italic;">mixed rice</span>(I used brown basmati, wild and red rice)<br />6C of <span style="font-weight: bold; font-style: italic;">chicken/vegetable stock</span>(may need more)<br />2 <span style="font-weight: bold; font-style: italic;">bay leaves</span><br />1 tblsp +1 tsp <span style="font-weight: bold; font-style: italic;">crushed red chillies</span>(more or less)<br />2 tblsp dried <span style="font-weight: bold; font-style: italic;">oregano</span><br />1 small <span style="font-weight: bold; font-style: italic;">onion</span>, finely chopped<br />3 cloves of <span style="font-weight: bold; font-style: italic;">garlic</span>, finely chopped<br />1 large <span style="font-weight: bold; font-style: italic;">carrot</span>, chopped into small pieces<br />3 medium sized <span style="font-weight: bold; font-style: italic;">potatoes</span>, chopped into small pieces<br />1/3 C of small <span style="font-weight: bold; font-style: italic;">butternut squash</span> pieces<br />2 C of <span style="font-weight: bold; font-style: italic;">broccoli florets</span><br />2 C of grated <span style="font-weight: bold; font-style: italic;">mature cheddar cheese</span><br />1 tblsp <span style="font-weight: bold; font-style: italic;">sesame seeds</span><br /><span style="font-weight: bold; font-style: italic;">salt and freshly ground pepper</span> to taste<br /><br /><span style="font-weight: bold; font-style: italic;">How to-</span><br /><ol><li>Mix together the stock, rice, bay leaves, oregano, 1 tblsp crushed red chillies, onion , garlic and season with salt and freshly ground pepper in a pan over high heat. Bring to a boil, reduce the heat to low, and cook for about 15 minutes.</li><li>Raise the heat to medium and add the carrots, potatoes and squash. Simmer for about 15 more minutes. Stir every now and then.<br /></li><li>Add the broccoli, and simmer for another 15 minutes. Stir every now and then. </li><li>Pre heat the oven at 220 deg C and ready a  baking dish .<br /></li><li>Add 1/2 of the cheese to the pan and simmer for 2-3 minutes, stirring continuously. Remove from heat.<br /></li><li>Transfer the contents to the baking dish (it should be a little watery ...add a little more stock, if it dries up too much at this stage). Mix together the sesame seeds, remaing cheese and the 1tsp of crushed red chillies. Sprinkle this mixture over the top.</li><li>Place the baking dish in the centre of the pre heated oven and bake for about 15-20 minutes or till the top is nicely browned and the mixture is hot and bubbly.</li><li>Serve hot.</li></ol>We had ours with some lightly steamed green beans on the side. These were meant to go into the bake too, but I forgot, so it formed a crunchy side to the softer main. The vegetables were not added all together, due to the variations in their cooking times. As mentioned earlier, the dish is quite watery when removed from heat (mainly because of the kind of rice used; arborio or other glutinous rice will make it quite thick by this time ) but upon baking, the liquid dissolves further and maintains a creamy thickness...the main reason for popping it into the oven. Moreover, the crust adds a lovely touch too.<br /><br /><div style="text-align: center;"><img src="http://i217.photobucket.com/albums/cc99/sunita11/a2-37.jpg" /><br /></div><br />This was something which everyone enjoyed, and hands reached out for seconds and even thirds. The simple nutty flavours from the rice and the crisp topping were a delight and every vegetable left their own mark. No extra oil or butter is needed. Moreover, what better way to clean up your fridge too. Be it <a href="http://www.cookingandme.com/2007/05/kaya-mezhukkupuratti-raw-banana-fries.html">stir-fried</a>, as a <a href="http://www.cookingandme.com/2007/08/ethakka-thoranvazhakkai-poriyalraw.html">thoran</a>, in <a href="http://www.cookingandme.com/2008/11/kaalan-kerala-specialty.html">kaalan</a>, even <a href="http://www.cookingandme.com/2008/07/vazhakka-podimas.html">podimas</a> or better still, as a steaming bajji dipped in tomato ketchup on a rainy day. Bliss! TH loves them too so this time his parents visited, we made vazhakka bajji. We just used 2 raw bananas and still there was more than enough for the four of us and we weren't hungry at all for dinner.<br /><br /><a href="http://farm4.static.flickr.com/3012/3040233373_8e605bd5e1.jpg?v=0"><img style="334px;" src="http://farm4.static.flickr.com/3012/3040233373_8e605bd5e1.jpg?v=0" alt="" border="0" /></a><br />This is a great party snack for kids and adults alike. Who can resist the golden, crispy goodness of bajjis?!.<span><br /><blockquote><span style="bold;">What I Used:</span><br /><br />Vazhakka / Raw bananas - 2<br />Besan / Kadala mavu / Chickpea flour - 2 cups<br />Whole jeera / jeerakam / cumin seeds - 1 tsp<br />Hing / Asafoetida / kaayam - 2 pinches<br />Red chilli powder - 1 tsp<br />Salt - to taste<br />Water - enough to make a thick batter<br />Oil - to deep fry</blockquote><span style="bold;"></span><blockquote><span style="bold;">How I Made It:</span><br /><br />1. Cut the banana midway and then slice them length-wise. The idea is to get thin (really thin!) slices of them about 4 inches long.<br /><br />2. Mix the chilli, salt, hing, jeera and besan well in a bowl and make a thick batter with just enough water. Make sure the consistency is a bit thicker than pancake / dosa batter, but not too thick that it doesn't leave your hand when you raise it above the bowl.<br /><br />3. Heat oil until nice and warm. Dip the banana slices in the batter and make sure its coated on all sides. Drop gently into the hot oil and wait for 2 mins before turning them over.<br /><br />4. When the bajjis turn golden brown, transfer to a tissue-lined container and serve immediately with some steaming tea.<br /></blockquote><br />Goes well with tomato sauce / ketchup and the monsoon rains. Enjoy!<br /><br /></span>

I had been thinking of making this cauliflower manchurian from past two months or even more then that, but somehow one or other reason my cauliflower ended up in some other cooking stuff. Finally I determined one day :).<br /><br /></span><span style="font-family:trebuchet ms;"><img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 525px; CURSOR: hand; TEXT-ALIGN: center" alt="Photobucket" src="http://i260.photobucket.com/albums/ii29/bhawana_2008/2CauliflowerManchurian.jpg" border="0" />Now the funniest part will start, I thought somehow that manchurian color happen to be so dark because they are fried till that color comes up. So I keep frying them till this color came. I completely forgot that adding tomato sauce only its color becomes brown or red sort of. Florets were like half burn till I fried them :(. I thought no problem I will make again and will post then. But Medhaa di encouraged me so much to post it, that I am posting it today as it is. Who knows when next time I will make this :).</span><br /><p><span style="font-family:trebuchet ms;"><strong>Ingredients: Sufficient for 2 people</strong></p></span><span style="font-family:trebuchet ms;"><p><strong><span style="font-family:trebuchet ms;"><em>For Fry Florets</em></span></strong><br />300 Gram cauliflower cut into small florets<br />3 Tblsp all purpose flour/maida<br />2.5 Tblsp cornflour<br />1/2 Tsp salt/as per taste<br />1/4 Tsp white pepper powder/red chili powder/as per taste<br />1/4 Cup water<br /><img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 525px; CURSOR: hand; TEXT-ALIGN: center" alt="Photobucket" src="http://i260.photobucket.com/albums/ii29/bhawana_2008/1CauliflowerManchurian.jpg" border="0" />4-5 Spring onion sliced<br />1 Cup capsicum<br />4 Pods garlic chopped finely<br />1" Ginger<br />3 Tblsp tomato sauce<br />1 Tblsp soya sauce<br />1 tsp Vinegar<br />Oil for cooking<br />Salt as per taste<br />White/Red chili powder as per taste<br /><br /><strong>Method:</strong> Mix all purpose flour/maida, cornflour, salt &#38; pepper as per taste in 1/4 cup of water. If batter became to thick then add a little more water. Consistency should be like dosa batter sort of. Dip cauliflower florets in the batter and deep fry them until they become a little brown in color. Fry all the florets and keep them on paper towel so that it can soak all the excess oil.<br /><img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 525px; CURSOR: hand; TEXT-ALIGN: center" alt="Photobucket" src="http://i260.photobucket.com/albums/ii29/bhawana_2008/3CauliflowerManchurian.jpg" border="0" />Now heat the oil in a pan and add chopped garlic, ginger. Fry them for few min and then add chopped spring onion and capsicum. Fry them till capsicum becomes tender, to this add tomato sauce,soya sauce, vinegar and adjust chili as per your taste. Now add fried cauliflower florets and mix well. Adjust salt as per taste. When were small, one of my neighbourhood aunt made sambhar like this with addition of some more vegetables. It tasted great. So when I saw this in her blog, thought of making this. I have not followed her recipe. As usual some editing in original recipe. But one thing for sure add any number of spices or cook any way this yellow dal and mix vegetables combination will ROCK :D.</span><br /><span style="font-family:trebuchet ms;"><br /><strong>Ingredients: Sufficient for 2-3 people</strong><br /><br />1 Cup yellow lentil (tuvar dal)<br />2 Cup mixed vegetables like, cauliflower florets, french beans cut in small pieces, sliced carrots,green peas)<br />1 Big onion chopped finely<br />1 Tsp ginger-garlic paste<br />1 Medium sized tomato chopped finely<br />1 Tsp cumin seeds<br />1/2 Tsp mustard seeds<br />2 Pinch of asafoetida<br />1/2 Tsp turmeric powder<br />1 green chillies chopped finely<br />1/2 Tsp red chili powder<br />1 Tsp lemon juice<br />Salt to taste<br />Oil for cooking<br />2 tbsp chopped coriander leaves for garnishing<br /><br /><strong>Method:</strong> Mix 1/2 tsp of turmeric powder &#38; 1 tsp salt and pressure cook the yellow lentil with 2 cups of water. One whistle is enough to cook that, as we dont want it too mushy initially. Keep this aside till other things are ready.<br />Boil all the vegetables for 10-15 min. Drain all the water and keep them aside too.<br /><img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 525px; CURSOR: hand; TEXT-ALIGN: center" alt="Photobucket" src="http://i260.photobucket.com/albums/ii29/bhawana_2008/dal2copy.jpg" border="0" /><br />Heat oil in a pan and add the cumin seeds, mustard seeds and asafoetida. Let it splutter and then add chopped onion. Stir it till onion changes its color, add ginger-garlic paste, chopped green chilies and tomatos. Cook this just for 3-4 min. Tomato's should not be mushy. Some people dont like tomatos half cooked, those can cook this until tomato's become mushy and starts leaving oil in the corner of the pan. To this add red chili powder and mix well. Now add all boiled vegetables and stir for few seconds, lastly add boiled yellow lentil and mix well. Adjust water as per your choice how much watery you want this curry. I added 1 cup of water. Adjust salt as per taste and add lemon juice. Mix well and cook on low flame for 2-3 min covering the lid. So that vegetables can soak spices flavour. Here is the recipe.<img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 525px; CURSOR: hand; TEXT-ALIGN: center" alt="Photobucket" src="http://i260.photobucket.com/albums/ii29/bhawana_2008/1rasmalai.jpg" border="0" /></span><br /><span style="font-family:trebuchet ms;"></span><br /><strong><span style="font-family:trebuchet ms;">Ingredients: Will Make 16 Squares of Rasmalai</span></strong><br /><br /><span style="font-family:trebuchet ms;">425 Gram ricotta Cheese</span><br /><span style="font-family:trebuchet ms;">3 Tblsp Sugar</span><br /><span style="font-family:trebuchet ms;">5 Cup milk</span><br /><span style="font-family:trebuchet ms;">3 Tblsp chopped almond and pistachios</span><br /><span style="font-family:trebuchet ms;">5-6 Cardamom</span><br /><span style="font-family:trebuchet ms;">2 Tblsp condensed milk</span><br /><span style="font-family:trebuchet ms;">3-5 Threads of saffron</span><br /><br /><span style="font-family:trebuchet ms;"><strong>Method:</strong> Preheat oven to 350F. Mix ricotta cheese and sugar with the help of hand blender properly. Pour this mixture in a greased baking tray and bake for about 35 min. Here I think just baking for 35 min will be suffice to make cheese firm after cooling down.<br />Allow it to cool for 30 min before cutting into squares.<br />Boil the milk in a heavy bottom pan till milk becomes almost 3 cups. Add the dry fruits, condensed milk, cardamom, and saffron. 		<description><![CDATA[<div style="justify;">Channa Masala Or Chole has always been one of my favorite side dishes. There are a zillion ways to make it and I think every family or household must have their own recipe. Sometimes when I taste chole I always think about one of two places where I have tasted some memorable. Some like it with potatoes, with lot of gravy, with very little gravy, made with different types of channa or garbanzo beans. To me what I really enjoyed as a kid was bread Chole from Richie Rich restaurant. Its the flavour and taste that is so embedded in my head and I always want to recreate that in my kitchen. So I must have tried a lot of recipes and at last come across the one that my sisters friend Sandhya from Detroit had given her. The closest to the RR chole for me. But then my sister told me that she adds the channa masala while cooking the beans and this added a very nice taste to the recipe.So there I Incorporated that into the recipe as well. The end product is a chole /channa masala that I totally enjoyed for dinner with some Tandoori Roti.  I like this recipe for its taste and simplicity. Place the soaked Channa/beans in a bowl add some water, salt, 1/2 tsp of channa masala and turmeric powder. Add some water inside the pressure cooker and then place this bowl and pressure cook for 4 whistles on medium heat.<br /><br />2. Heat the wok add oil 2 tsp and add onion then garlic and ginger and cook. When the onions are well cooked add tomatoes and cook until they are well done. Cool and blend them to a paste.<br /><br />3. Heat the remaining oil and add bay leaves, pepper and cinnamon. Allow them to get roasted for a few seconds and then add green chillis and the paste.Cook them on medium heat for 5 minutes.<br /><br />4. Remove the beans from the pressure cooker and add them to the wok. Or sometimes.. like it has been for me today, its a very  busy sunday.. getting ready for the next week, laundry.. cleaning the house, entertaining guests..etc etc., and with all of that going on.. you hardly have time to cook something for an afternoon snack.. But that doesnt mean you shouldnt enjoy something delicious.. !! <br /><br />So, for something quick..and something easy.. the theme for November would be <br />"<strong>Fix It</strong>". I'd like to invite you all to bring out your magic wands and whip up some quick and easy sunday snacks.. with hardly any cooking involved.. Sweet or Spicy, hot or cold, veg or non-veg(check rules for more details)...Anything would be ok.. as long as it involves.. zero to hardly any cooking.<br /><br /><span style="bold;">Update:</span> There seems to be some confusion about what type of foods would be eligible for this event. Anything that involves very minimal effort and most of the time is spent just in assembling the dish would be a perfect fit.<br /><br />Here are some guidelines:<br />Definitely <span style="bold;">no deep frying</span> <br />Dry Roasting/Tempering/Seasoning/Warming/Freezing/Refrigerating OK<br />Simple Quick Microwavable dishes OK<br />Simple Quick baking dishes OK<br />Simple Quick Grilling dishes OK<br />If you are using Rice/Couscous/Pasta/Noodles (cooking them with water, thats acceptable - since its minimal effort). So I will try without using egg and then will update how will that make difference.</span><br /><span style="font-family:trebuchet ms;"></span><br /><span style="font-family:trebuchet ms;"><strong>Ingredients: 18-20 Cookies</strong></span><br /><span style="font-family:trebuchet ms;"></span><br /><span style="font-family:trebuchet ms;">1 Cup cashews coarsely ground</span><br /><span style="font-family:trebuchet ms;">3 Tblsp semolina</span><br /><span style="font-family:trebuchet ms;">1/2 Cup all purpose flour</span><br /><span style="font-family:trebuchet ms;">1/4 Tsp baking soda</span><br /><span style="font-family:trebuchet ms;">1 Egg</span><br /><span style="font-family:trebuchet ms;">2.5 Tblsp unsalted butter</span><br /><span style="font-family:trebuchet ms;">3 Tblsp light brown sugar</span><br /><span style="font-family:trebuchet ms;">8-9 Cashew nuts halved for garnishing</span><br /><img style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 525px; CURSOR: hand; TEXT-ALIGN: center" alt="Photobucket" src="http://i260.photobucket.com/albums/ii29/bhawana_2008/cashewcookies3.jpg" border="0" /><br /><span style="font-family:trebuchet ms;"><strong>Method:</strong> Pre heat the oven at 160C. Sift the flour and soda into the bowl and mix well. To this add semolina and ground cashews and mix well. Beat egg in a bowl. To this add brown sugar and unsalted butter. Mix well and add all dry ingredients. Dont over knead/mix.<br />Pour half a spoon mixture on greased baking tray and flatten that with the help of fingers to make a small circle. Press a halved cashew on top of each cookie and bake in the centre of the oven for 10-12 minutes or till golden around the edges. It contains anti aging elements and very good for skin and hair. I saw this recipe in a magazine and liked it.. So dear friends enjoy this honey toast in breakfast....:).</span><br /><span style="font-family:trebuchet ms;"><br /><strong>Ingredients: Sufficient for two people</strong><br /><br />4 Brown bread slice<br />4 tsp Honey<br />20 Almonds crushed<br />2 tsp Brown Sugar<br />1 tsp Butter<br />Pistachious(Pista) for garnishing<br /><br /><strong>Method:</strong> Roast the brown bread pieces and keep them aside. Heat the butter in a pan and add brown sugar. Stir it to mix well. To this add honey and crushed almonds as soon as brown sugar melts. Stir it for a minute, mix well. Now spread this mixture to the roasted bread and garnish this with chopped pistachious(pista) and have with milk. I liked this to have in the morning time :) with my tea or milk.
