Recipe Marathon # 1 Day 2 with Simple Peas Pulao
One of the hearty dishes to make - esp when you are out of time, lazy to go out for dinner/lunch, have a significant other who is so inept ( or pretends to!) in making a dish for you or that which he makes you rather not eat.Such cases can be easily managed with this quick fix meal. Hardly any effort and it can be made as simple or as rich as you wish.
I like to include some minimum amount of Nuts in daily intake..not much just little for nutters like me
So I added some fried ( Ok! That was for my tongue , not so much for health! You skip it! Ok!) cashews to the rice. You can toast them in the oven too
( There..now r u happy ;-))
Method
1. Soak the rice for 30min in water. heat some Butter/Ghee/Oil in a non stick pan and saute chopped onions along with bay leaf, cloves, pepper, garlic and cumin.
2.Once the onions get soft, add the drained rice and saute for another 3-4 min till the rice gets lightly pink.
3.Add 2 1/2 cup water and salt , mix well and then close the lid and cook for another 5-8 min till the rice is 80% cooked.
4.Add the peas at this point and mix it gently along with the rice. Cook for another 5 min until done.
5. Garnish with cashews, mint and cilantro. Serve hot and it goes well with any side dish that you can think of. From simple Raita to rich dishes like Shahi Paneer
