Guava Butter

It’s guava season and I made some guava butter. The fruits were very ripe and were pleading with me to put them out of their misery. They were so fragrant the whole kitchen was perfumed.

The guavas I used were not the variety pictured above. Yes I know, I’m messin’ wid ya head. I actually used the yellow skinned, cream-fleshed variety. After cooking I pressed the soft flesh through a seive to remove the hard little seeds.

Then I added sugar, cooked the fruit some more, added a little fresh beetroot juice and pureed up the whole mixture with a stick blender. Why the beetroot? I don’t know, I just wanted it to go pink. Full moon coming up, maybe.
