Going North East Indian with Thukpa

After a long trip away from home - the first thing I look for when I come back is home-cooked food. Something v simple, easy on the stomach ( God! I had enough of restaurants to last a lifetime!). My taste buds immediately seek out soups.

As soon as I came - I was gently reminded of dear Bhags RCI Event. Only after seeing her event , did I realise that I had not tried a single recipe from North East India! How could I have missed! It was v clever and smart of her to choose unknown categories. I searched high and low and got few recipes - I hardly had any ingredients since I had just stepped into our home but this Thukpa recipe captured my fancy since it required only v basic ingredients which I had.

Since it is usually served with meat, I made a vegetarian version for me. It hardly takes any effort and gets ready in a jiffy. Its protein rich and good for digestion.

Ingredients
  • 1/2 onion, sliced

  • 1 pkt Baked Tofu ( instead of meat )
  • 1/2 pkt of Egg noodles
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp fennel seeds
  • few cloves
  • 1 bay leaf
  • 1 Anise
  • few sprigs of cilantro
  • ground pepper and salt to taste

Method

1.Heat a non stick and in 1 tsp of canola oil saute the all the ingredients except cilantro and egg noodles.

2.Add 3 cups of vegetable stock or water. Bring it to a boil and add the noodles.

3.Once soft, add salt and plenty of pepper and garnish with cilantro.

All done in matter of minutes - under 10 min and soothing too.
