		<description><![CDATA[<div>As <a href="http://www.cookingandme.com/2008/06/vendakka-aviyalokra-cooked-in-tangy.html">I had mentioned before</a>, TH and I are not huge fans of Okra (<i>Vendakka</i>/ladies finger. But I feel guilty if I leave out any vegetable completely (except for <i>Pavakka</i>/Karela!) so I bought it the other day just to try and make something different. This is a spontaneous recipe that happened just like that and it came out really well, so much so that TH didn't even realise it was Okra :) And its really simple too, using minimum ingredients. </div>

<div><b>What I Used:</b><br />
<br />
<i>Serves 2</i><br />
<br />
<i>Okra/Vendakka</i>/Ladies finger - 10 nos<br />
Besan/chickpeas flour - 3 tbsp<br />
Chilli powder - 1 tsp<br />
Turmeric - a pinch<br />
Hing - 1/4 tsp<br />
Jeera - 1/2 tsp<br />
Salt - to taste<br />
Oil<br />
<br />
<b>How I Made It:</b><br />
<br />
1. Mix the besan with chilli, turmeric, hing, jeera and salt. Add enough water to make a thick batter. <br />
<br />
2. Cut the okra into thin discs and add to the besan batter. <br />
<br />
3. Heat about 2 tbsp oil in a non-stick pan and add this mixture. Keep stirring occasionally until it starts separating into small bits and the okra is cooked.&#160;</div>

		<description><![CDATA[I am trying...trying really hard. At what? At using up the hoarded ingredients before they run out of time. Every time I rummage through the pantry, I am ashamed at the amount of  unused ingredients that stare back at me. So many things crying out to be picked and transformed into delicious goodies. This time, it was a pack of pasta flour. Do I even remember at what point in time it made it's way from a shelf along the aisles of the supermarket? Of course...no :-((<br /><br />Let's leave all that aside...for, the pack of pasta flour that was rescued from it's exile was transformed into a very light and summery meal...ravioli style, samosa shaped bicoloured pasta filled with mushrooms, onions, garlic and peanuts. Of course, I did start out with something in mind but, churned out something entirely different. But, that does not matter...as long as what's served at the table tastes good. By the way, am I babbling? Please ignore me...<br /><br />I have tried my hand with pasta once before...made ravioli, but the pictures were too gory to be posted. This time, I used type 'O' pasta flour, which is basically a mixture of wheat and durum flour. This light flour is high in protein and can also be used for pizza and bread making.<br /><br />I made two balls of dough with the flour...one kneaded with spinach juice and the other with beet juice. The two were brought together to form a bi- coloured roll of dough , which was then, divided, rolled, filled, shaped, boiled and brushed with a flavoured oil and a sprinkling of spices. Regular flour works fine too.<br /><br />Now, let's jump to the recipe for the bi - coloured, triangular, filled pasta (don't know what to call it, really) :-( Ahh, but what's in a name , anyway??<br /><br /><div style="text-align: center;"><img src="http://i217.photobucket.com/albums/cc99/sunita11/b2.png" /><br /></div><br /><span style="font-weight: bold; font-style: italic;">What's needed-</span><br /><br /><span style="font-weight: bold; font-style: italic;">For the doughs</span>-<br /><br />2C + 2C <span style="font-weight: bold; font-style: italic;">pasta flour</span>(I used <a href="http://www.goodnessdirect.co.uk/cgi-local/frameset/detail/431825_Doves_Farm_Organic_Speciality_Pasta_Flour__1kg.html">Doves Farm organic pasta flour</a>) or regular plain flour, or a mix of plain and whole wheat flour<br />2C <span style="font-weight: bold; font-style: italic;">spinach leaves</span>, pureed with 1C water and strained<br />3-4 <span style="font-weight: bold; font-style: italic;">cooked beets</span>(uncooked ones are fine too), pureed with 1C water and strained<br /><br /><div style="text-align: center;"><img src="http://i217.photobucket.com/albums/cc99/sunita11/b1-1.png" /><br /></div><br />1 <span style="font-weight: bold; font-style: italic;">egg, </span><span>beaten and divided into half</span><br />1 tsp <span style="font-weight: bold; font-style: italic;">salt</span><br /><br /><span style="font-weight: bold; font-style: italic;">For the filling-</span><br /><br />1 and 1/2 C <span style="font-weight: bold; font-style: italic;">peanuts</span><br />1 <span style="font-weight: bold; font-style: italic;">red onion,</span> finely chopped<br />6-7 cloves of <span style="font-weight: bold; font-style: italic;">garlic</span>, finely chopped<br />8-9 <span style="font-weight: bold; font-style: italic;">chestnut mushrooms</span>, sliced<br />1/2 C <span style="font-weight: bold; font-style: italic;">extra virgin olive oil</span><br />1 tsp <span style="font-weight: bold; font-style: italic;">crushed red chillies</span><br />3 tblsp of dried <span style="font-weight: bold; font-style: italic;">oregano</span><br /><br /><span style="font-weight: bold; font-style: italic;">Others ( for sprinkling at the end)-</span><br /><br /><span style="font-weight: bold; font-style: italic;">paprika</span><br /><span style="font-weight: bold; font-style: italic;">freshly ground pepper</span><br /><br /><span style="font-weight: bold; font-style: italic;">How to-<br /><br /></span><span style="font-weight: bold; font-style: italic;">The doughs ( both are prepared the same way)-</span><br /><span style="font-weight: bold; font-style: italic;"></span><ol><li>Divide the flour into two bowls, with 1/2 tsp of salt in each and make a well .</li><li>Add half beaten egg into each well of dough and mix with the flour.</li><li>Add the liquid (spinach in one and beet in the other), a little at a time( may or may not need the entire amounts).</li><li>Knead till the doughs are smooth. They should be soft, but not sticky. If the doughs is too dry, add a little water.<br /></li><li>Cover and leave to rest for half an hour.</li></ol><span style="font-weight: bold; font-style: italic;">The filling-</span><br /><ol><li>Heat the olive oil in a pan and add the onions, garlic, peanuts, chillies and oregano, and cook, stirring continuously over medium heat till the onions are soft.</li><li>Add the mushrooms and cook till they soften. Keep aside to cool, separating the solid bits from the extra oil...save the oil for later use.<br /></li></ol><span style="font-weight: bold; font-style: italic;">Assembly and cooking-</span><br /><ol><li>With floured hands,make two long, sausagy  bits of dough ( one from each).</li><li>Entwine one around the other.</li><li>Cut the roll into small portions ( I made around 24) and roll each out on a floured surface to about 4 inches in diameter and about a mm in thickness.</li><li>Place a little of the filling in the centre and shape as shown below.<br /><br /><div style="text-align: center;"><img src="http://i217.photobucket.com/albums/cc99/sunita11/b3.png" /><br /></div><br /></li><li>Ready the plates to be served in, with some fresh salad. ( I served on  a bed of lettuce)<br /></li><li>Drop them , a few at a time into boiling water and cook for 4-5 minutes.</li><li>Drain and brush with the leftover flavoured oil from the filling. Arrange on the plates and sprinkle a little paprika and freshly ground peppeer.</li><li>Serve immediately and enjoy an elegant meal, while taking in the sunshine...well, even if there is no sunshine :-P<br /><br /><div style="text-align: center;"><img src="http://i217.photobucket.com/albums/cc99/sunita11/b4.png" /><br /></div></li></ol>And wait! I haven't finished yet... if you feel that you might like a little sauce with it...what is pasta with no sauce...or you have two ravished, cheese loving kids, then hurry. In a pan, add some tomato puree, a tsp of chopped garlic, finely chopped red pepper, a handful of sweetcorn and some oregano, with enough water, salt and freshly ground pepper, stir and transfer over heat. Simmer for 2-3 minutes and add 1/2 a tsp of cornflour. Simmer for a minute and a nice  and light sauce is ready to be drizzled over the pasta. 		<description><![CDATA[A bunch of thanks for Mythreyee of "Paajaka" who is hosting a <a href="http://www.paajaka.com/2008/06/announcing-sweet-series.html">"Sweet Series-Sweet Rotis"</a> event., otherwise i could have never made these  healthy, moist and soft rotis, I wouldn't have thought out of the box for coming up with these Simple n Nutritious Sweet Potato and Coconut Parathas.. As soon as i saw the announcement, i started thinking of various sweet rotis grandmas, mom and my MIL makes, but i wanted to something even simpler than those.. Usually the sweet rotis they make are Sojjappam/Halva Poori , Oliga/Puran poli and Paala Poori.. But these are time consuming and you need to have both time and patience( Hehehe, I am very bad at this though!!! )..<br /><br /><br /><div><a href="http://curryinkadai.blogspot.com/2008/06/sweet-potato-and-coconut-parathas-flat.html"><img src="http://farm4.static.flickr.com/3225/2609608382_f60bcf9057_b.jpg" alt="" border="0" /></a>Stack of sweet potato and coconut parathas<br /><br /></div>I thought of making peanut butter rotis, kova Rotis, etc..,  before these Sweet Potato and Coconut Rotis.. I wasn't really sure if could at least bind the flour and  sweet potato together, anyways i decided to try a few rotis.. Cooked the potato in microwave , added some dry coconut,  a little bit of sugar, ghee and Wheat flour, Tada!! To may surprise I was actually able to bind everything together to a very soft pliable dough... Adding coconut gave these rotis that extra nuttyness and flavor.. And here goes the simple recipe..<br /><br /><div><img src="http://farm4.static.flickr.com/3234/2611289809_6619a139ce_b.jpg" alt="" border="0" />Microwaved and Mashed Sweet Potato<br /></div><br />Ingredients:<br /><ul><li>1 medium sized sweet potato</li><li>1/4 cup dried coconut or fresh coconut grated very fine</li><li>3/4 - 1 cup whole wheat flour( Atta )</li><li>1 cardamom grounded / 1/2 tsp cardamom powder</li><li>Sugar/jaggery  according to taste</li><li>Ghee or butter stick for cooking<br /></li></ul><br /><div><img src="http://farm4.static.flickr.com/3173/2609608056_c1cf938d4c_b.jpg" alt="" border="0" />Soft and moist dough from  Sweet Potato and Coconut <br /></div><br />Method Of Preparation:<br /><ul><li>Cook the sweet potato in a microwave under potato setting in a microwave safe bowl covered with very little  water.</li><li>Once the sweet potato is completely cooked, peel and mash the sweet potato. While its hot add jaggery / sugar, elaichi( cardamom powder ), nutmeg, salt.</li><li>If you want to add dried coconut add it now, otherwise if  you wanna use fresh scraped coconut add it once the sweet potato mixture is cooled to room temperature</li><li>Once the potato is cooled, add some milk( optional) add flour and try to bind together.. You might need to adjust the amount of flour, milk according to the size of the sweet potato..</li><li>The dough should be very soft and moist.. Apply ghee( clarified butter ) allover the dough keep it covered for half an hour. These rotis came out thin and very moist. I just bought some more sweet potatoes from farmers market  to make these rotis again.. Hail to sweet potato...!!! The need to maintain the essential balance is so crucial - instances like did you take the required amount of Dietery Fibre? what about whole grains? Did your meal the whole day today include sufficient servings of vegetables and fruits? and Oh yes! Proteins? Yes the Pyramid and its classification look simple enough - but in day to day hectic lifestyle, we tend to forget taking each and every thing into consideration and in long run we realise that we have missed out on lots of nutrition and adequate amount of balance much needed esp for Vegetarians.<br /><br /><img alt="" src="http://bp3.blogger.com/_BekkwVBo24k/SG1AoWzzl1I/AAAAAAAAD2E/ikTJcqd_1cs/s400/veggie.jpg" border="0" /> <p align="center"><em>Image taken from </em><a href="http://www.mamashealth.com/nutrition/images/veggie.jpg"><em>here</em></a></p><br /><br />So, in order to make sure of that aspect, I try to plan ahead all the meals during the week - right from breakfast, lunch, tea time to dinner; making sure to see that I have incorporated all the essential groups in the pyramid. Unless spaced out - its almost impossible to gobble down all the servings in one go - hence the process has to start right from breakfast. Hence this is one of those recipes I came up with - to start off our day on the right note.<br /><br /><img alt="" src="http://bp3.blogger.com/_BekkwVBo24k/SG0_PFxQSaI/AAAAAAAAD1s/yecalOrjSkc/s400/wholegrain-pancakes5.JPG" border="0" /><br /><br />I bought a <a href="https://www.bobsredmill.com/catalog/nutritional_info.php?id=1">10grain Bread Mix </a>a while back. It has all the essential whole grains like wheat,rolled oats,Rye,Corn,triticale,millet etc).I also had <a href="http://chetday.com/teff.html">Teff flour </a>at hand and pancakes are so common in so many households - so made Pancakes out of them.I also wanted to add one fruit and some nuts- so grilled and toasted them resp for the topping. It was light, fluffy, hearty and filled with all the nature's best ingredients.<br /><br />Ingredients<br />1 1/2 cup 10 grain bread mix<br />1/4 cup Teff flour<br />1 tsp baking powder<br />1 egg<br />pinch of salt<br />2 tbsp demerera sugar/ brown sugar<br />1 cup low fat milk<br />1-2 bananas, sliced vertically<br />2-3 tbsp maple syrup<br />1/4 cup lightly toasted pecans<br /><br /><strong>Method</strong><br /><br />1.Mix the flours along with baking powder, salt and sugar. 		<description><![CDATA[About a month back, we were invited to a friend's place for dinner.Our dear friend S had brought her egg curry.This would be the second time i am tasting her egg curry.From that point every weekend i wanted to make that curry, but something or other comes up and i ended up cooking something else.This weekend i was deter mined, so called S up while she was in her daughter's swimming class...:).Through the phone, she told me the recipe.Thanks to her for sharing this recipe.In this recipe, hard boiled eggs are fried and milk is added for extra flavour.According S, instead of milk, if you add the water left after making homemade panner leads to extra flavour. Because of the salmonella scare , i brought home a big can of crushed tomatoes.So some of the previous and upcoming recipes will have crushed tomatoes.You can always subsitute them for fre
